A good chocolate chip cookie can make any day a good day, which is perhaps why I am constantly exploring a healthy recipe for the cookie. This week, I needed something sweet without ruining my spring clean up of mind & body to get in the way. This recipe is an easy one with one bowl needed. It is also fast and most importantly pretty healthy. It covers most dietary needs such as gluten free, low fat, no dairy and can be vegan if needed. So grab that spoon and lets get baking.
Set oven to 180c/350f
In a bowl mix together with an electric mixer or some strong arms & a wooden spoon.
- 1 banana mashed
- 2 eggs (or another banana if vegan)
- 1 cup pure peanut butter (if not pure then probably don’t need to add sugar below)
- 2 tsp pure vanilla extract
- 2 tbsp brown sugar or coconut sugar
- 2/3 cups gluten free oats
- 1/2 tsp baking soda
- a dash of salt
- 1 tsp cinnamon (optional)
Mix that together and then fold in
- 0.5-0.75 cup mini pure mini chocolate chips
With a table spoon, take out a scoop of dough and roll into a little ball and place on baking tray. You should get about 12-16 balls. Lightly flatten them by pressing on top of ball with finger. Place in oven for about 9-10 minutes depending on oven. Take out and cool.
It is indeed a “healthy cookie”, so the texture isn’t typical of a normal cookie. However, it is soft, chewy and even my husband didn’t notice that banana was thrown in or no butter/little sugar. Great for freezing too. Not to mention, you can easily have a second cookie without making a big dent into your healthy eating.
