Most of the time, I just want to hop out the door in the morning. Which is why I have a mason jar full of my breakfast waiting for me in the fridge when I wake up. This one is so easy and checks all the boxes for healthy, gluten free, vegan etc. Best part is it takes 2 minutes tops to make.
- 3 tbsp chia seeds
- 0.5 tsp maca powder*
- 0.5 tsp pure vanilla extract
- 1-2 heaping tsp organic peanut butter (or any nut butter) depending on taste
- 1 cup (230 ml) almond milk (or any type of dairy free milk of choice or dairy milk if desired)
- 1 frozen banana, sliced
In a mason jar, put in the seeds first then the rest of ingredients, adding the milk last**. Put the lid on the jar and shake really well until all ingredients are combined and mixed, for about 1 minute. Put the jar in the fridge and leave overnight. The next morning your breakfast is ready :). Add additional nuts or berries if desired.
*Maca powder is literally a plant extract from South America and a superfood. There are many theories behind it. Some say it increases energy and improves mood. Others say it is a powerful tool for fertility and libido. Some say you should avoid it if pregnant, whilst others say it is great for pregnancy. I am not a doctor so can’t say, so completely up to you to include the maca powder or not. The recipe works well without it as well. I just like to add it as an extra kick.
**You may need to add more milk if everything is not covered, basically all the ingredients needs to be submerged in milk (the chia seeds will soak up the milk), but also don’t fill the jar with milk as then you will end up with a soup texture. Treat chia seeds like oatmeal.
