Ultimate healthy cookie/brownie fusion

Cookie? Brownie? Chocolate snack? This recipe ends up as a sort of fusion of the best of both worlds, cookies + brownies. Even better is it is refined sugar, gluten free, dairy free and can be vegan. I originally found this recipe   Healthy no bake cookies from Two Pea’s and their pod blog. A great blog, but most recipes there are not on the light front so I was surprised when I came across this. Below is the tried and true recipe. You will need about 10 minutes to prepare, 20 minutes in fridge and no oven needed! Easy peasy 🙂

2 cups oats

1/2 cup coconut flakes

1/2 cup honey (or agave nectar)

1/3 cup pure cocoa powder

1/4 cup almond or coconut milk (any dairy free milk will do)

1/4 cup coconut oil melted

2 heaping tbsp of peanut butter or any type of nut butter

1 tsp vanilla extract

pinch of salt

In a bowl mix the salt, oats and coconut flakes. In a sauce pan mix cocoa powder and honey on low heat. Once smooth and mixed, add coconut oil and milk choice. Keep on heat until all melted and mixed, it may boil a little. Once it starts to boil, take off heat.

Quickly add the vanilla, peanut butter and mix. The heat from the chocolate mixture will melt the peanut butter, which is what you want. Add the bowl of oats, coconut flakes and salt to mixture. It is okay if the chocolate mixture is still warm when you add the dry ingredients.

Once completely mixed you may either spread out the mixture in a pan and put into the fridge for 20 minutes then cut into squares (about 22 squares). Or once everything is completely mixed you may scoop into cookie shapes (about 22 cookies) on cooking paper on a plate and but into the fridge for 20 minutes. The form is up to you, but either way it will need at least 20 minutes in the fridge just to firm it up. Viola you brownies/cookies/bars are ready.

This is great as they can be kept in the fridge for a week and get better as the days go on. They are freezable too. These babies are moist which I love and you do not really taste the peanut butter, the star of these is the cocoa and oats with the hint of coconut. A new favorite in our house!
