No time, wanted something different, cant eat cereal due to my stomach, need something to take to eat on my way to work. Pinterest and I had a date and I looked for easy recipes to whip up. This is my outcome.
Sweet Potato Pancakes
Makes 2 servings (4 small pancakes = a serving)/ 10 minutes
Half of one sweet potato cooked and mashed
1/2 cup flour of your choice (I use spelt or wheat)
Dash of cinnamon (you decide how much)
1/2 tsp baking powder
1 tbsp. melted butter (optional)
1 cup milk (I use almond milk)
Stir together and then when you have a mixture cook like any other pancake recipe in a pan on the stove. I top my pancakes with pecans and a teaspoon of honey. These pancakes can be kept in the fridge when cooked and I normally put them in a tubberware, warm them in microwave/cut them before I leave the house and eat them on the bus/train to work. They are filling and will keep you full to lunch 🙂

It is true everyone who is on some bizarre detox diet is eating these. I am not detoxing, but the recipe sounded too easy and I had a sad looking banana.
In a blender mix one banana, 1/2 cup oats, 4 eggs and any optional ingredients (cinnamon or coconut or cocoa powder). Hit that mixer button then pour batter onto hot pan and cook like any other pancake recipe. Again easy to keep in fridge when cooked and heat up in tubberware and eat on the go. Top with whatever you fancy.
Coconut Oat Energy Bites:
In 10 minute you have a mix of a great treat that can be eaten for breakfast or snack.
In a bowl mix 1/2 cup peanut butter, 1/4 cup honey, 1 tsp cocoa powder, 1 cup oats, 1 tsp vanilla essence, 1/2 cup coconut. Mix and when all together roll into small balls (makes about 21). You may need to put into fridge for a few minutes to make it easier to roll into small balls. 1 ball is a serving (about 70 calories).
